Vegan Coconut-Berry Ice Cream

If you’re a nice cream aka home made ice cream fan here’s a quick and simple, yummy, and nutritional vegan berry ice cream that I want to share, so y’all can enjoy it as well!

This Berry ice cream is great for many reasons, here are just a few:

  • Vegan
  • Dairy-free
  • Nutritional
  • Egg free
  • Gluten-free & grain-free
  • Paleo
  • Nut-free
  • Soy-free


Ingredients Needed:

  • 1 cup Frozen Berries
  • 1/2 cup Coconut milk (if the berries are still too thick with this amount feel free to add a bit more)
  • 1 Banana
  • 1 1/2 teaspoon of vanilla extract
  • Date syrup (my preferred sweetener!  Date syrup is an invert sugar, it’s easily absorbed and assimilated by our body.)
  • Your preferred toppings: almonds, walnuts, pistachios, and cacao nibs ( if you haven’t heard or tried cacao nibs stop missing out! Here’s a link where you can get  1 lb for just $11 bucks! Get Your Cacao Nibs HERE.



  • Add the banana and berries with the coconut milk in the blender, and mix at high speed until it begins to become smooth. I alternate between pulse and just mixing.    (What type of blender do you use? I use a Vitamix, and strongly believe anyone who doesn’t own one needs one. Not to bash on the Ninja bullet, and other brands. If you have a Vitamix you know what I’m talking about!)
  • Once you’ve got the berries blended add the date syrup, and the vanilla. Mix for another 10-15 seconds.
  • Lastly, fill your bowl up with your berry ice cream, add toppings, and enjoy your delicious and nutritional dish!
